Apple Cinnamon Butterscotch Bars
 
Bars are such a great way for me to get creative with flavors! I picked up some butterscotch chips while I was at the store the other day and I wanted to incorporate them into a recipe. The first thing that came to my mind was apple pie! These bars in a nut shell are apple pie bars with a butterscotch kick! The cooked apple adds so much flavor and moistness. And of course I added lots of cinnamon because I love cinnamon and the white chocolate drizzle is the perfect finishing touch. Make these! They really stand out in my book of bars!

Ingredients
  1. 1 & 1/4 cup all purpose flour
  2. 3/4 cup brown sugar + 1 tablespoon
  3. 1/4 cup white sugar
  4. 1/4 teaspoon salt
  5. 1 & 1/2 teaspoon cinnamon
  6. 1 teaspoon baking powder
  7. 1/2 cup butter
  8. 1 egg & 1 egg yolk
  9. 1 teaspoon vanilla extract
  10. 1/2 teaspoon almond extract
  11. 1 large apple
  12. 1/2 cup butterscotch chips
  13. 1/2 cup white chocolate chips (for drizzle)
Instructions
  1. Preheat oven to 350 degrees F. Butter a 9 x 9 in square baking pan.
  2. Chop apple into 1/2 cubes. Place in a small saucepan over medium heat. Add 1 tablespoon brown sugar and 1/2 teaspoon cinnamon. Cook with lid on until apples are soft. Remove lid and continue to cook until juice has evaporated.
  3. In a medium bowl, sift flour, salt, baking powder, and remaining cinnamon. Set aside.
  4. In a small saucepan, melt butter over low heat. Once butter is melted, turn heat to medium and let the butter continue to cook for about 5 minutes, until foamy and color turns to a rich deep golden brown. Remove from heat and transfer to a bowl. Let cool for about 15 minutes.
  5. Measure your brown sugar and white sugar into a large bowl. Once butter is cool, add to sugar and mix until smooth. Add your whole egg, egg yolk, vanilla, and almond extract. Mix until incorporated.
  6. Add dry ingredients to wet ingredients and mix until just incorporated. Add apple cubes and butterscotch chips.
  7. Spoon into prepared pan and spread out using a spatula.
  8. Bake in preheated oven for 35 minutes or until toothpick inserted into center comes out clean or with a few moist crumbs.
  9. Remove from oven and let cool completely.
  10. Cut into 16 squares.
  11. Melt white chocolate in microwave and drizzle on top of cooled bars.

    Butterscotch has a way of sucking me in too… The other day I made some magic bars (or 7-layer bars) and used a little “too many” butterscotch chips according to the recipe, but I soon found up out there is no limit when it comes to butterscotch chips – SO addicting! And these bars look sooo yummy!!
