Bars are such a great way for me to get creative with flavors! I picked up some butterscotch chips while I was at the store the other day and I wanted to incorporate them into a recipe. The first thing that came to my mind was apple pie! These bars in a nut shell are apple pie bars with a butterscotch kick! The cooked apple adds so much flavor and moistness. And of course I added lots of cinnamon because I love cinnamon and the white chocolate drizzle is the perfect finishing touch. Make these! They really stand out in my book of bars!

Ingredients
- 1 & 1/4 cup all purpose flour
- 3/4 cup brown sugar + 1 tablespoon
- 1/4 cup white sugar
- 1/4 teaspoon salt
- 1 & 1/2 teaspoon cinnamon
- 1 teaspoon baking powder
- 1/2 cup butter
- 1 egg & 1 egg yolk
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1 large apple
- 1/2 cup butterscotch chips
- 1/2 cup white chocolate chips (for drizzle)
Instructions
- Preheat oven to 350 degrees F. Butter a 9 x 9 in square baking pan.
- Chop apple into 1/2 cubes. Place in a small saucepan over medium heat. Add 1 tablespoon brown sugar and 1/2 teaspoon cinnamon. Cook with lid on until apples are soft. Remove lid and continue to cook until juice has evaporated.
- In a medium bowl, sift flour, salt, baking powder, and remaining cinnamon. Set aside.
- In a small saucepan, melt butter over low heat. Once butter is melted, turn heat to medium and let the butter continue to cook for about 5 minutes, until foamy and color turns to a rich deep golden brown. Remove from heat and transfer to a bowl. Let cool for about 15 minutes.
- Measure your brown sugar and white sugar into a large bowl. Once butter is cool, add to sugar and mix until smooth. Add your whole egg, egg yolk, vanilla, and almond extract. Mix until incorporated.
- Add dry ingredients to wet ingredients and mix until just incorporated. Add apple cubes and butterscotch chips.
- Spoon into prepared pan and spread out using a spatula.
- Bake in preheated oven for 35 minutes or until toothpick inserted into center comes out clean or with a few moist crumbs.
- Remove from oven and let cool completely.
- Cut into 16 squares.
- Melt white chocolate in microwave and drizzle on top of cooled bars.
A Little Sweet Life https://alittlesweetlife.com/
I love butterscotch and the combination between it and apples is amazing. I loved that you topped these bars with a dainty drizzle of white chocolate. . .so cute.
Thank you! Doesn’t the white chocolate drizzle make them look even more appetizing!?! They turned out so yummy, I’m very happy
What delicious bars! I just love the combination of apple and butterscotch and the white chocolate drizzle looks great too.
Thanks Thalia!
Butterscotch has a way of sucking me in too… The other day I made some magic bars (or 7-layer bars) and used a little “too many” butterscotch chips according to the recipe, but I soon found up out there is no limit when it comes to butterscotch chips – SO addicting! And these bars look sooo yummy!!
That sounds like something I would do with cinnamon and white chocolate. Actually, I have done it hehehe There’s just no stopping my sweet tooth And may I add, I love 7 layer bars! Thanks for stopping by
