Today was a reggae kind of day. I always seem to listen to it when summer is approaching. In six weeks my husband and I will be heading to Europe for a month and we’re so excited!!! I can’t wait to see the look on his face when we visit all the cities he’s been wanting to see his whole life. Plus he gets to meet more of my family which I’m so thrilled about. So this morning some reggae on Pandora seemed like the perfect music to motivate me to get the day started.
This salad came about because I wanted something fresh and filling. So many people are afraid to cook but cooking to me is about experimenting with what you have in your kitchen. In the end we should eat to nourish our bodies, so even if your meal sounds weird or doesn’t look very appetizing, if you have fresh and nutritious food on your plate, that’s what counts. I didn’t want to go to the grocery store so I just grabbed what I had in the fridge and pantry and created this delicious and healthy salad. Don’t be scared to just throw some things together on a plate and call it a meal! Just remember to use fresh and nutritionally dense foods and you’ll be alright!
Ingredients
- 1/3 cup couscous
- 2 cups lettuce
- 1 zucchini
- 5 mushrooms
- 6 pitted black olives
- 4 asparagus spears
- 6 cherry tomatoes
- 1 teaspoon chopped scallion
- 1/4 cup croutons
- 2 tablespoons olive oil
- Salt
- Pepper
Instructions
- Cook your couscous according to package directions.
- Chop your zucchini, asparagus, and mushrooms. Season with salt and pepper. Saute with olive oil in a skillet over medium heat until tender.
- Chop your lettuce and place in a large bowl. Layer couscous on top. Next add you sauteed vegetables. Sprinkle with chopped cherry tomatoes, olives, scallions, and croutons.
- Toss and serve.
