Could you survive for six months eating only food scraps? Well, one couple did just that in an eye opening documentary called Just Eat It. It aired last night on MSNBC and I have to say some of the statistics were so disturbing. I already had a pretty good idea that as a nation we waste so much food, but this film really put everything into perspective.
I challenge everyone reading this to experiment in the kitchen and create meals with what you already have on hand. We stuff our refrigerators and pantries full and before you know it produce goes bad and straight into the trash. What about leftovers? Leftovers are great the next day. Soups, rice, and pasta are even more flavorful if they sit in the fridge a couple of days.
I came up with this simple dessert while trying to figure out what to do with the leftover heavy whipping cream I had from making my Tiramisu Cake. I looked around the pantry for some inspiration and found Biscoff cookies from my Strawberries & Cream Biscoff Cookie Parfaits and chocolate chips from making so many cookies. This is such an easy dessert to whip up and the presentation is beautiful! Here’s to #nofoodwasted.
