There’s a wonderful restaurant in Orange right by Chapman University called Felix Continental Cafe and let me tell you about their Tres Leches Cake. It’s one of the best desserts I’ve had in my life. The cake is so incredibly moist and rich from being soaked in all that delicious sweetened milk! My Tres Leches Cake is delicious but I know one thing, Felix must use even MORE milk to soak his cake! Next time I will definitely double the milk in this recipe. The longer this cake sits the more time it has to soak up all that sweet milky goodness, so if you can wait, make this cake and let it sit overnight. And by day 2 or 3 this cake will be at its prime just like my Tiramisu cake. These type of cakes just need more time!

For the cake
  1. 1.5 cups all purpose flour
  2. 1 cup sugar
  3. 1.5 teaspoons baking powder
  4. 1/4 teaspoon salt
  5. 7 eggs, separated
  6. 2 teaspoons vanilla extract
  7. 1/2 teaspoon almond extract
For the 3 leches mixture
  1. 1 can (12 oz) evaporated milk
  2. 1 can (14 oz) sweetened condensed milk
  3. 1 cup milk
  4. 2 teaspoons vanilla extract
For the topping
  1. 1.5 cup heavy whipping cream
  2. 1 packet vanilla sugar
Instructions
  1. Preheat oven to 350 degrees F. Grease a 9 x 11 in baking pan.
  2. In a medium bowl whip egg whites until stiff peaks form. Set aside.
  3. In another medium bowl, mix flour, sugar, baking powder, and salt. Set aside.
  4. In a large bowl, using a mixer, beat egg yolks on medium speed until creamy and pale in color. Add vanilla and almond extract and mix.
  5. Add flour mixture to egg yolks and mix until combined. Fold in egg whites gently, trying to maintain fluffiness in the batter.
  6. Pour into prepared pan and bake in preheated oven for about 25-30 minutes or until toothpick inserted in center comes out clean.
  7. During the last few minutes of baking, make your tres leches mixture by adding all ingredients in a bowl and whisking.
  8. Remove from oven. Once pan is cool enough to handle invert cake into a cool pan the same size or slightly larger. Poke holes all over the cake using a fork. Pour tres leches mixture over cake making sure you soak the whole cake including the corners.
  9. Cover with plastic wrap and put in refrigerator for at least 3 hours. The longer this cake sits, the better. I recommend letting it sit overnight it you can wait that long!
  10. Once ready to serve garnish with fresh whipped cream.
