So I knew Valentine’s Day was approaching right around December 26th. I kid you not (and I’m sure you noticed) stores started putting up Valentine’s Day decor when we were all still trying to enjoy our holidays! But its ok because it got me thinking about what special treat I wanted to create this year on Cupid’s Day.
These frosted sandwich cookies with heart cutouts are inspired by my favorite all American bakery SusieCakes. I discovered this bakery about 5 years ago and I’ve been hooked ever since. They have the best red velvet cake I’ve ever tasted! What they also have are Sweetheart Sandwich Cookies and this recipe is my version of those cookies! I really don’t think you can go wrong with filling two sugar cookies with frosting! What makes these extra special is the heart cutout in the center and the colored sprinkles. Make these cookies for your sweetheart, your best friend, family, or for your kids’ school party. They’ll be so impressed with these cute little creations! I used my fluffy cream cheese buttercream that I color with fresh beet juice for this recipe and the pink compliments the red sprinkles so well. You could also use regular buttercream for a stiffer frosting. Either way, make these adorable little cookies!
- 1 & 1/3 cup all purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup white sugar
- 1 packet vanilla sugar
- 1/2 cup butter (softened)
- 1 egg (room temperature)
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- Red sugar sprinkles
- Preheat oven to 375 degrees F. Line two baking sheets with parchment paper.
- In a medium bowl mix flour, baking soda, baking powder, and salt. Set aside.
- In a medium bowl of a standing electric mixer fitted with the paddle attachment, cream butter and sugar until light and fluffy. Add in egg, vanilla, and almond extract. Mix until incorporated.
- Add your dry ingredients to your wet ingredients and mix with a wooden spoon until a dough forms.
- Pour the red sugar sprinkles into a small plate or bowl.
- Use a teaspoon or a mini ice cream scoop to scoop your dough and form balls. Roll only half of the balls in the red sugar sprinkles. Place on parchment paper lined baking sheet.
- Bake in preheated oven for about 8-10 minutes or until edges are just slightly colored. Do not over bake, they should still feel soft in the middle.
- Remove from oven and let sit on baking sheet for 2 minutes. Move the cookies to a rack to cool completely.
- While cookies are still hot, use a mini heart shaped cookie cutter and cut out hearts into the cookies that have sprinkles. Doing this while the cookies are cool will cause your cookies to break!
- Once cookies are completely cool, frost the ones without sprinkles and place a heart cutout sprinkle cookie on top.
