Spring is approaching so it’s time for some fresh meals! This pasta salad recipe has been in my family for years and I’m delighted to share it with you. Besides the fact that it’s pretty to look at, it’s also delicious and good for you! This is the perfect pasta salad to make if you have a busy week ahead of you and you’re short on time. Store leftovers in the refrigerator in pre-portioned tupperware and you’ll have lunch the entire week!

Ingredients
- 8 oz Tri-Color Rotini Pasta
- 1 - 6 oz can pitted olives
- 1 - 8.75 oz can corn
- 5 oz mozzarella cheese
- 1/3 cup roasted red bell pepper
- 3 tablespoons chopped sun-dried tomato
- Juice of 1/2 lemon
- 2 tablespoons olive oil
- Salt
- Pepper
Instructions
- Cook pasta according to package directions. Make sure to salt pasta water.
- Chop your olives, mozzarella, roasted red bell pepper, and sun-dried tomatoes. Drain and rinse the corn.
- Once pasta is cooked, drain and rinse with cold water.
- Pour pasta in a large bowl. Add olive oil and mix. Add the rest of your ingredients and stir. Pour the lemon juice in and season with salt and pepper to taste.
- Plate and garnish with chopped basil for an extra burst of freshness and flavor!
- Store covered in refrigerator.

Same here! They’re so easy to put together and delicious! My family always ate roasted red bell peppers so I grew up eating them as well. Must be a Romanian and Eastern European thing!
