The inspiration for these cookies is a yummy chocolate bar by Chocolove; Toffee & Almonds in Milk Chocolate. Chocolove chocolate bars really set the mood. While you’re eating your chocolate you get to enjoy a love poem written right inside the wrapper. So adorable! But what I was really thinking when I first tasted this chocolate was that it would probably be amazing in a chocolate chip cookie! So here you have it. And because I love white chocolate and I thought it would be a nice contrast, I added some in as well. Make these cookies and make sure you share because you’ll probably want to eat all of them!

Ingredients
- 1/2 cup (4 oz) softened butter
- 1/3 cup white sugar
- 1/3 cup brown sugar
- 1 cup & 1 tablespoon all purpose flour
- 1 egg at room temperature
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon vanilla extract
- 1 Chocolove Toffee & Almonds in Milk Chocolate Bar chopped (or chocolate bar of your choice)
- 3.5 oz white chocolate chips
Instructions
- Preheat oven to 350 degrees F and line 2 baking sheets with parchment paper. (I baked mine in two rounds).
- In a small bowl sift flour, salt, and baking soda.
- In a medium bowl mix butter and sugar until incorporated. Add in egg and vanilla extract and mix. Add in flour mixture and using a wooden spoon mix until a dough starts to form. Do not over mix. Add in chopped chocolate and white chocolate chips.
- Spoon a heaping teaspoon of cookie dough onto parchment paper.
- Bake in preheated oven for 10-13 minutes or until edges are golden brown.
- Remove from oven and let cool on tray for about 5 minutes.
- Transfer to a rack to cool.
- Store in an airtight container.
