This one’s for all the ladies out there! I know you love cake batter. I mean how could you not?! Right off the spoon! And what should you do with a box of your favorite cake mix? Get creative and make waffles out of it! These waffles are the best of both worlds, a little sinful and a little nutritious. I combined cake mix with oat flour to make these delicious little waffles. The oat flour makes them more dense than regular waffles, so if you’re expecting a light and airy waffle this is not the recipe. But, if you want another way to add oats to your diet, this is perfect. Top them with agave sweetened Greek yogurt blended with fresh blueberries and you get a delicious and nutritious breakfast!
- 1/2 cup of your favorite cake mix flour (I used a white cake mix)
- 3/4 cup oat flour
- 1/4 teaspoon almond extract
- 2/3 cup water
- 1 cup fat free Greek yogurt (I use Fage)
- 1/4 cup blueberries
- 1 tablespoon agave syrup
- In a medium bowl sift your cake flour and oat flour. Add water and almond extract and continue to mix until you only have a few clumps.
- Turn on your waffle iron. Once heated spray with cooking spray. Spoon half the batter into waffle iron and cook according to manufacturer's directions.
- To make the Greek yogurt sauce blend with blueberries and agave syrup.
- Serve waffles warm with Greek yogurt on top.
